Maple Syrup


While the Island is not home to a large number of Sugar Maples, we nonetheless manage to run a very good Maple Syrup Program in the late winter/early spring. Last year, with the help of our students, we managed to boil down eleven litres of syrup! Students learn about tree identification and health, environmental factors affecting sap yield, how to tap a tree, boil sap, and the history behind the process. They conclude their "sugaring off" session by tasting real Maple Syrup.
